Crepes de Frutas

Beat 1 egg per person with ½ teaspoon honey per egg and a very small amount of cream. Melt butter or olive oil in a small skillet on low temperature and add a thin layer of egg mixture. Slowly cook until surface is slightly sticky but firm. Remove from skillet, spread a thin layer of sour cream, and roll into logs. Top with Very Berry Sauce, fresh fruit, whipped cream, yogurt, or some other healthy topping of your choice.
