Mushroom Soup

Sauté favorite mushrooms in duck fat (see Roast Duck below), olive oil, or butter, with onions or leeks. Salt to taste. Blend until desired consistency, chunky or smooth—you may need to add broth. Top with thin slices of fresh mushrooms.
