Bok Choy

Baby Bok Choy is most tender and is becoming very popular and inexpensive in some Asian supermarkets. Remove the white tough stem from the green leaves. Sauté the chopped stem at a low temperature in olive oil, then add the chopped green leaves and stir until just barely wilted. Bok Choy is also great in soups.
