No-Crust Quiche

Beat 12 eggs and 1 cup heavy cream until foamy. Stir in 1½ cups raw sheep or goat cheese, ½ cup cherry tomatoes halved, 1½ cup spinach, and season with sea salt. Pour into well-buttered pie plate and bake 30-40 minutes in a preheated oven at 350°F or until middle is set but still moist; do not overbake. Serve warm or cool. Add less cheese, more vegetables, or other variations.
