Shepherd’s Pie
Use the Cauliflower Mashed “Potatoes” and Meat Loaf recipes listed above. In a shallow baking dish cover cooked meatloaf with a layer of mashed cauliflower and top with Parmesan cheese. Bake until hot and cheese melts and browns slightly. (Single-serving baking dishes work great for this recipe.)
